I raided my fridge, and like a damn culinary mastermind, I threw together black olives, cut-up salami, mozzarella, a light sprinkle of Mediterranean herb feta, sun-dried tomatoes, and (obviously) shredded chicken. This wasn’t some meticulously planned recipe—I just needed a meal prep hack that wouldn’t suck. Spoiler: it worked.

Dressing: The Keto Magic Sauce

What ties it all together? A bold, tangy dressing that keeps this salad from feeling like punishment. It’s olive oil-rich, low-carb, and actually makes you want to eat the dreaded chicken breast. Drizzle it, toss it, and pat yourself on the back for staying #dayclubready.

🔥 Keto Antipasto Salad Recipe

Ingredients (Makes 4 Meals for the Week):

  • 5 oz shredded chicken breast
  • ¼ cup sliced black olives
  • 2 oz cut-up salami
  • ¼ cup mozzarella, cubed or shredded
  • 1T Mediterranean herb feta (just a sprinkle)
  • 2T sun-dried tomatoes, chopped

🔥 Keto Dressing:

  • ½ cup extra virgin olive oil
  • 3T red wine vinegar (or apple cider vinegar)
