It’s been a minute since I’ve posted an air fryer recipe, but if you know me, you know I’m a creature of habit. I tend to meal prep the same few recipes I’ve posted here on Dayclub SEAZN Monday through Friday until I absolutely cannot eat them for another six months. That’s usually my sign to switch things up and create something new. Enter these Air Fryer Chipotle Chicken Thighs: smoky, slightly spicy, ridiculously easy, and packed with flavor. They’ve officially earned a spot in my current meal prep rotation and I’m here to share it.

Air Fryer Chipotle Chicken Thighs Ingredients + Directions
Ingredients
- 4.5 lbs boneless, skinless chicken thighs
- 2 packets McCormick Grill Mates Chipotle Pepper Marinade Mix
- 1/4 cup olive oil
- 1/4 cup water
- 2 tablespoons lime juice
- 3 cloves garlic, minced
Directions
- Trim any excess fat from the chicken thighs and place them in a large mixing bowl or resealable bag.
- In a separate bowl, whisk together the Chipotle Pepper Marinade Mix packets, olive oil, water, lime juice, and garlic.
- Pour the marinade over the chicken and toss until every piece is evenly coated.
- Cover and refrigerate for at least 30 minutes. For the best flavor, marinate for 4–8 hours.
- Preheat your air fryer to 380°F (205°C).
- Arrange the chicken thighs in a single layer in the air fryer basket. Work in batches if needed.
- Cook for 20–22 minutes, flipping halfway through, until the chicken reaches an internal temperature of 175°F and develops those beautiful caramelized edges.
- Let the chicken rest for 5 minutes before serving.
