If you’re anything like me, summer meal prep needs to be simple, high-protein, and packed with flavor. I don’t want to spend hours in the kitchen when I could be poolside, working on a new project, or soaking up a little desert sunshine.
This Air Fryer Mojito Lime Chicken Thighs checks every box. It’s keto-friendly, low carb, juicy, citrusy, and ridiculously easy to make. The air fryer gives the chicken that perfect charred edge without firing up the grill, making it one of my new favorite healthy summer meal prep recipes right now.

Air Fryer Mojito Lime Chicken Thighs Recipe
Ingredients
- 4.5 lbs boneless, skinless chicken thighs
- 2 packets McCormick Grill Mates Mojito Lime Marinade Mix
- 1/4 cup olive oil
- 1/4 cup water
- Juice of 2 limes
- 3 cloves garlic, minced
- 1 tbsp honey (optional, helps caramelization)
- 1 tbsp chopped fresh mint (optional, but works surprisingly well)
- 1 tbsp dried cilantro (optional)

Directions
- Trim excess fat from the chicken thighs.
- In a large bowl, whisk together:
- 2 packets Mojito Lime Marinade Mix
- Olive oil
- Water
- Lime juice
- Garlic
- Honey (if using)
- Mint (if using)
- Dried cilantro (if using)
- Add the chicken thighs and toss until fully coated.
- Refrigerate for:
- Minimum 30 minutes
- Ideally 4–8 hours
- Preheat your air fryer to 400°F (205°C).
- Arrange the chicken in a single layer in the air fryer basket.
- Cook for 18–22 minutes, flipping halfway through cooking.
- Continue cooking until the chicken reaches an internal temperature of 175°F and develops golden edges.
- Let the chicken rest for 5 minutes before serving.
