Recipe + Bake Times (Single Batch)
Ingredients
- 6 eggs
- 2 tbsp melted butter
- 1.5 tsp vanilla
- ½ cup cottage cheese
- 2 tbsp coconut flour
- ½ cup blueberries
- ½ tsp cinnamon
- 1 tbsp coconut oil (drizzle on top)
- Optional: 1–2 tbsp allulose or keto-friendly sweetener
📌 Quick Note on Bake Temperatures
The loaf and muffin versions bake at different temps on purpose:
- Loaf = 350°F because it’s deeper and needs a slower, even bake so the center sets without the top over-browning.
- Muffins = 375°F because they’re shallow, rise better at a higher heat, and won’t burn since the batter isn’t deep.
Two formats, two temps — both delicious.
Loaf Instructions (Metal 1-Pound Pan, 350°F)
- Preheat oven to 350°F
- Line loaf pan with parchment
- Mix all ingredients except blueberries until smooth
- Fold blueberries in gently
- Pour batter into pan
- Drizzle coconut oil over the top
- Bake 28–35 minutes, checking at 28
- Look for a soft jiggle in the center (not wet)
- Cool 10 minutes before slicing
Muffin Instructions (Silicone Tray, 375°F)
- Preheat oven to 375°F
- Lightly spray silicone muffin pan
- Pour batter evenly into wells
- Drizzle a little coconut oil on top
- Bake 16–20 minutes, checking at 16
- Look for a set top and soft jiggle in the center
- Cool 5–7 minutes before removing
