Last month I shared my go-to crustless quiche recipe, and I’ve been testing out variations ever since. You can call it “Test Run Küche Dayclub SEAZN”. It’s one of those recipes that doesn’t care what time it is because it works for breakfast, lunch, or dinner.
I kept the same high-protein base but added Italian seasoning and loaded the top with pepperoni before air frying it in my 7-inch springform pan. he result landed somewhere between a crustless pizza, a calzone, and a breakfast casserole. However you describe it, it was so damn good that I already made it twice in the last week. 🍕🤤

Like Pizza… But Breakfast
The cottage cheese and mozzarella give this quiche a surprisingly dense, almost bread-like texture, making it much more filling than a traditional egg bake. As the pepperoni crisps in the air fryer, it releases just enough flavor to make the whole thing taste like pizza without needing a crust. It’s become one of my favorite high-protein breakfasts whenever I’m craving pizza.

Pizza Quiche (Air Fryer Recipe)
Ingredients
- 6 large eggs
- ½ cup cottage cheese
- ¼ to ½ cup shredded mozzarella cheese
- 1½ teaspoons Italian seasoning
- Pepperoni slices (as many as you’d like)
Directions
- Whisk together the eggs, cottage cheese, mozzarella, and Italian seasoning until smooth.
- Pour the mixture into a lightly greased 7-inch springform pan.
- Arrange the pepperoni over the top.
- Air fry at 340°F for 20 minutes.
- Reduce the temperature to 320°F and cook for another 10 minutes, or until the center is fully set.
- Let cool for 5 to 10 minutes before removing from the pan and slicing.
